It’s hard to say no to a good churro. It’s nearly impossible to say no to Chef Thongchua Kim’s vegan churros with vegan chocolate ganache.

Vegan Churros with Vegan Chocolate Ganache
INGREDIENTS:
For Churros:
1/4 cup avocado oil or any
neutral oil
1 cup Organic Califia Farms
Almond milk
1 cup water
3 tablespoons sugar
2 cups all purpose flour
(Gluten-free flour can also be substituted.)
For Vegan Ganache:
1/2 cup Califia Farms Heavy
Whipping Cream
1 cup chopped vegan dark
chocolate
For Cinnamon Sugar:
1 cup white sugar
2 tablespoons ground cinnamon
INSTRUCTIONS:
1. In a small saucepan, combine the oil,
Califia Farms Almond milk, water, and
sugar and bring it to a boil.
2. Remove from the heat and stir in
the flour until it forms a ball of dough.
Set aside.
3. Make the chocolate sauce by heating
the Califia Farms Heavy Whipping Cream
and vegan chocolate in a small pot
on low heat until melted. Set aside.
4. Mix the cinnamon and sugar in a
small bowl to make the coating.
5. Fill a deep pot with three to four inches
of oil, and heat on high until it
reaches 370° F. Use an instant-read
thermometer to check the temperature.
6. Transfer the dough into a piping bag
fitted with a large star tip. Pipe the dough
into the pot of hot oil, forming lines
four to five inches long. Pipe two to
three churros at a time. Fry them until
golden brown.
7. Transfer the cooked churros onto
a paper towel for one to two minutes
before quickly rolling them in the
cinnamon sugar. Repeat until all the
dough is used up.
8. Serve with warm chocolate sauce.
